A truly delicious dessert or breakfast. Make it with Chocolate Chip, Cinnamon Raisin, or Cranberry Walnut Soda Breads. Makes one 9" x 9" pan.
Preheat oven to 350F. Lightly grease a 9" x 9" baking dish.
Place the cubed, partially dried soda bread in a mixing bowl. Drizzle the melted butter on the bread and mix lightly.
In another mixing bowl combine remaining ingredients. Mix thoroughly.
Place bread in prepared baking dish. Pour liquid mixture on top and allow it to saturate the bread pieces. Let sit for 30 mins to 1 hr.
Place in preheated oven and bake for 1 hour. Check for doneness around 50 mins. If needed, protect the edges from burning by covering with foil.
Serve warm with your favorite sauce, like a bourbon crème or whiskey sauce.
Combine all ingredients in a saucepan. Whisk together over low heat until butter is melted and sugar is dissolved. Ladle the sauce over individual servings of bread pudding.
Bring cream to simmer over medium heat. Slowly whisk in cornstarch. Bring to a boil, whisking constantly. Reduce heat to simmer for a minute, whisking constantly. Remove from heat and stir in sugar and bourbon until sugar is completely dissolved. Ladle the sauce over individual servings of bread pudding.
Want it without alcohol? Just omit the bourbon.
Soda Bread French Toast with Berries
Make an exceptional French Toast with Nana's Raisin, Cranberry Walnut, Chocolate Chip or any other sweet Soda Breads
Beat eggs, milk, and vanilla together in a shallow bowl. Dredge each slice of soda bread in the egg mixture, allowing bread to soak a few seconds on each side.
Place a greased skillet over medium high heat. Add as many slices of bread to the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary. Serve hot with butter, maple syrup, and fresh berries.
