Strawberry Chocolate Chip Shortcake
Makes 2
- 2 cups fresh strawberries, hulled and sliced
- 2 tbs granulated sugar
- 4 slices Chocolate Chip Soda Bread, cut into 5” pcs and ½” thick
- 1 cup heavy cream
- ½ tsp vanilla extract
Place freezer-safe bowl and whisk in freezer. You'll use these later
to make the whipped cream.
Mash 1 cup of the strawberries with a potato masher in a small bowl. Stir in the remaining sliced strawberries. Slowly add 1 Tbs sugar and gently mix. Adjust level of sweetness as needed. Cover and chill for 15 mins.
In the meantime take the chilled bowl and whisk from the freezer. Pour in the whipping cream, 1 Tbs sugar, and the vanilla extract. Beat until medium peaks form.
Place 1 slice of soda bread on a plate. Ladle the strawberry mixture on top, followed by a layer of whipped cream. Top it off with the second slice of soda bread. Layer it again with the strawberries and a dollop of whipped cream. Garnish with a strawberry and serve immediately.
Raisin Soda Bread Sundae with Caramel Sauce
Makes 1
- 1 slice of Nana’s Raisin Soda Bread, cut at least ½” thick
- 1 scoop of vanilla ice cream
- Caramel sauce, heated
- Whipped cream, optional
Drizzle the warmed caramel sauce on the plate. Place the bread on the plate and top with the vanilla ice cream. Add whipped cream if desired. Drizzle with heated caramel and serve immediately.
Cranberry Walnut Soda Bread Parfait
Makes 1. You could also use pudding or frozen yogurt in place of the ice cream.
- 1 slice of Cranberry Walnut Soda Bread - Small handful of dried cranberries
- Red berry sauce (mixed berry, strawberry, etc) - Small handful of chopped walnuts
- 1 scoop of vanilla ice cream - Whipped cream (optional)
Slice the soda bread into 3 pieces that are at least ½” thick and can fit into the dessert or wine glass. Cut the crusts off of the soda bread.
Drizzle berry sauce in the bottom of the glass. Place the first bread inside the glass. Top it with a layer of ice cream, and then scatter several dried cranberries on top. Drizzle with the berry sauce and repeat the layers: bread, ice cream, a few cranberries and then the sauce again.
Top the parfait with whipped cream (optional), and garnish with cranberries and walnuts. Serve immediately.
Soda Bread French Toast w/Berries
- 4 eggs - 8 thick slices of Raisin Soda Bread
- 2/3 cup milk - Butter or vegetable oil
- 2 tsp. cinnamon - Maple syrup, fresh blueberries and sliced strawberries
Beat eggs, milk, and cinnamon together. Whisk until well blended and pour into a shallow bowl.
Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture.
Melt some butter (or use vegetable oil) over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time.
Fry until brown on both sides, flipping the bread when necessary. Serve hot with butter, maple syrup, and fresh berries.
